Quick and easy vegetable fried rice recipe, homemade with simple ingredients in one pot over stovetop. This 30 minute meal is better than Chinese takeout. Loaded with scrambled eggs and frozen vegetables.

Ingredients

  • 1 tbsp Butter
  • 1 tbsp Vegetable oil Can also use canola, corn or light olive oil
  • 1 tsp Sesame oil
  • 1/2 cup Onion Finely chopped
  • 3 cloves Garlic Finely minced
  • 1 cup Frozen vegetables Combination of peas, carrots, corn, green beans
  • 2 Eggs Large, Lightly beaten
  • 4 cups Rice Jasmine or Basmati, Already cooked, Day old is best
  • 3-4 tbsp Soy sauce Low sodium
  • 1-2 tbsp Sriracha sauce
  • 2 tsp Oyster sauce Optional
  • Salt To taste
  • Pepper To taste
  • 2-3 tbsp Green onions Finley chopped, For garnish

Instructions

  1. Heat butter, vegetable oil, sesame oil in a large nonstick pot over medium high heat.

  2. Add onion, garlic, frozen vegetables and saute for a few minutes until they are tender. 

  3. Push these vegetables to one side of the pot and add eggs.

  4. Scramble them until fully cooked. 

  5. Mix them together with the veggies.

  6. Add boiled rice, soy sauce, Sriracha sauce, oyster sauce, salt, pepper and mix everything together.

  7. Garnish with lots of green onions. Enjoy!
