Quick and easy peanut noodles recipe, made with simple ingredients in one pot on stovetop. This 30 minute meal is loaded with garlic, peanut butter and a little spice.

Ingredients

  • 1 pound Spaghetti
  • 1 tbsp Olive oil Or vegetable oil
  • 1 tbsp Sesame oil
  • 2.5 tbsp Garlic Finely minced
  • 1 tsp Ginger Finely minced
  • 2 tbsp Onions Finely chopped, Optional
  • 1/3 cup Soy sauce Low sodium
  • 1.5-2 tbsp Sriracha sauce
  • 1.5 tsp Fish sauce Optional
  • 2.5 tbsp Seasoned rice vinegar
  • 2 tbsp Brown sugar
  • 1/3 cup Peanut butter
  • Salt To taste
  • 2 tbsp Additional peanut butter For drizzling
  • 1 stalk Green onion Finely sliced, For topping
  • 3 tbsp Peanuts Roasted, Salted or unsalted
  • 1 small Lime For topping

Instructions

  • Cook spaghetti in a nonstick pot, based on your box directions. Drain and keep aside.
  • In the same pot, heat olive oil and sesame oil over low heat.
  • Add garlic, ginger, onions and saute for 1-2 minutes or until fragrant.
  • Add soy sauce, Sriracha sauce, fish sauce, vinegar, brown sugar, peanut butter, salt and whisk everything together until smooth. Turn off heat. 
  • Add boiled spaghetti in this pot mix it together with the sauce until fully combined. 
  • Drizzle some melted peanut butter on top. 
  • Sprinkle green onions and roasted peanuts. 
  • Squeeze a bit of lime juice on top and enjoy.
