Quick, easy, crispy, oven-baked breakfast potatoes recipe, homemade with simple ingredients in one pan in 30 minutes. Loaded with garlic, paprika, Italian herbs.

Ingredients

  • 2 pounds Potatoes Washed, Peeled, Diced into 1/2 inch cubes
  • 2 tbsp Butter Unsalted, Melted
  • 3 tbsp Olive oil
  • Salt To taste
  • Pepper To taste
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1/2 tsp Ginger powder
  • 1/2 tsp Onion powder
  • 1-2 tsp Italian seasoning Can also replace with just dried parsley, Adjust according to your preference

Instructions

  1. Place potatoes in a large baking tray. I used a big 11x17 baking tray.

  2. Drizzle melted butter and olive oil.

  3. Sprinkle salt, pepper, paprika, garlic powder, ginger powder, onion powder, Italian seasoning.

  4. Toss to coat everything.

  5. Spread out the potatoes. Use 2 trays (if you are using smaller trays) because the potatoes need to be spread out.

  6. Bake at 400 degrees F for 20 minutes or until they are cooked through in the center.

  7. Turn on the broiler and broil theM for 4-5 minutes until tops are golden brown and crispy.

  8. Garnish with fresh parsley and enjoy!

Recipe Notes

  • Leftovers can be stored in a sealed container in the fridge fo up to 2 days but they won't be as crispy as the day they were made fresh. They can be reheated in the microwave or oven or even stovetop.
