Instant Pot Sausage and Potatoes

  • Place a steamer basket in the Instant Pot and pour water.
  • Add the potatoes in the basket.
  • Put the lid on and turn the valve to “Sealing.”
  • Select “Manual” mode and set the timer for 6 minutes.
  • When the cook time is over, do a quick pressure release.
  • Remove lid and then, remove basket with steamed potatoes. Keep this aside.
  • Remove/ discard water from the pressure cooker.
  • Turn on the "Saute" mode and heat 1 tbsp butter and 1 tbsp oil.
  • Add sausages and cook until golden brown.
  • Remove from pressure cooker onto a plate, lined with paper towels.
  • Add remaining 1 tbsp butter and 1 tbsp oil in pressure cooker.
  • When the butter and oil get hot, add steamed potatoes, Italian seasoning, salt, pepper, parsley and cook for a few minutes until they are golden brown and cooked through.
  • Optional: For crispy potatoes, work in batches and cook potatoes on each side for 3-4 minutes.
  • Add the cooked sausages and gently mix everything together. Enjoy!

  • Leftovers can be stored in a sealed container in the fridge for up to 3 days and reheated in the microwave or stovetop.
