Place a steamer basket in the Instant Pot and pour water.
Add the potatoes in the basket.
Put the lid on and turn the valve to “Sealing.”
Select “Manual” mode and set the timer for 6 minutes.
When the cook time is over, do a quick pressure release.
Remove lid and then, remove basket with steamed potatoes. Keep this aside.
Remove/ discard water from the pressure cooker.
Turn on the "Saute" mode and heat 1 tablespoon butter and 1 tablespoon oil.
Add sausages and cook until golden brown.
Remove from pressure cooker onto a plate, lined with paper towels.
Add remaining 1 tablespoon butter and 1 tablespoon oil in pressure cooker.
When the butter and oil get hot, add steamed potatoes, Italian seasoning, salt, pepper, parsley and cook for a few minutes until they are golden brown and cooked through.
Optional: For crispy potatoes, work in batches and cook potatoes on each side for 3-4 minutes.
Add the cooked sausages and gently mix everything together. Enjoy!
