Quick and easy zucchini pizza recipe, homemade with simple ingredients in one pan in 15 minutes. Healthy, low carb appetizer bites, snack or main dish.

Ingredients

  • 4 Zucchinis Medium size, Washed, Patted dry, Cut into 1/4 inch round slices
  • 1/3 cup Pizza sauce Or marinara sauce
  • Salt To taste
  • Pepper To taste
  • 1 tbsp Italian seasoning
  • 3/4 cup Shredded cheese Mozzarella, Cheddar or a blend of various cheeses
  • 1-2 tbsp Parsley Finely chopped, For garnish

Instructions

  1. Place sliced zucchinis on a greased baking tray.

  2. Broil 1-2 minutes on one side and 1-2 minutes on the other side until it's crisp but tender. 

  3. Remove tray from oven.

  4. Spread pizza sauce on top of each slice. 

  5. Sprinkle salt, pepper, Italian seasoning, cheese.

  6. Broil again until cheese is melted (about 1-2 minutes).

  7. Garnish with parsley and serve immediately. Enjoy!
