Quick and easy cucumber tomato salad recipe, homemade with simple ingredients in one pot 20 minutes. Marinated with an Italian herb vinaigrette dressing.

Ingredients

  • 4 tbsp Olive oil
  • 2-3 tbsp Vinegar Or fresh lemon juice
  • 1 tbsp Cilantro Fresh, Finely chopped
  • 1 tbsp Parsley Fresh, Finely chopped
  • 1 tsp Dill Fresh, Finely chopped
  • 1 tsp Ginger powder
  • 1 tsp Garlic powder
  • Salt To taste
  • Pepper To taste
  • 3 cups Cucumbers Diced
  • 2 cups Cherry tomatoes Cut in half
  • 1/4 cup Onions Roughly chopped

Instructions

  1. In a large mixing bowl or salad bowl, add oil, vinegar, cilantro, parsley. dill, ginger, garlic, salt, pepper and whisk everything together.

  2. Add cucumbers, tomatoes, onions and toss to coat everything.

  3. Cover and chill for 30 minutes to allow the flavors to marinate. Enjoy!
