In a large mixing bowl or salad bowl, add oil, vinegar, cilantro, parsley. dill, ginger, garlic, salt, pepper and whisk everything together. Add cucumbers, tomatoes, onions and toss to coat everything.
Cover and chill for 30 minutes to allow the flavors to marinate. Enjoy!
