Quick and easy stuffed zucchini boats recipe, homemade with simple ingredients in one pan in 20 minutes. Healthy, low carb, loaded with cheese and veggies.

Ingredients

  • 4 Zucchinis Cut in half lengthwise, Seeds scooped out and discarded
  • 2-3 tbsp Garlic oil
  • 1 cup Pizza sauce Or marinara sauce
  • 1/2 cup Mozzarella cheese Shredded
  • 1/2 cup Cheddar cheese Shredded
  • 1/2 cup Parmesan cheese Shredded
  • Green peppers Roughly chopped
  • 1/2 cup Onions Roughly chopped
  • 1/3 cup Black olives
  • 1-2 tbsp Italian seasoning
  • 1 tbsp Red chili flakes Optional

Instructions

  1. Slice the zucchinis lengthwise and scoop out the seeds with a spoon and discard them. Pat them dry with paper towels.

  2. Brush garlic oil inside each zucchini.

  3. Spread pizza sauce.

  4. Top off with mozzarella, cheddar and parmesan cheese. 

  5. Add toppings such as green peppers, onions, olives.

  6. Toss a little more cheese, if you like.

  7. Sprinkle Italian seasoning and red chili flakes on top.

  8. Place them on a sheet pan, lined with parchment paper.

  9. Bake at 400 degrees F for 12-18 minutes or until cheese has fully melted. 

  10. Serve immediately. Enjoy!
