Quick and easy oven roasted carrots recipe, made with simple ingredients in one pan/ pot. This 30 minute side dish is flavored with salt, pepper and garlic.

Ingredients

  • 2 pounds Baby carrots Patted dry
  • 3 tbsp Olive oil
  • Salt To taste
  • Pepper To taste
  • 1 tsp Garlic powder
  • 2 tbsp Parsley Fresh, Roughly chopped

Instructions

  1. Spread carrots on a baking tray, lined with aluminum foil. 

  2. Drizzle oil all over the top and sprinkle salt, pepper, garlic powder. Toss everything together. 

  3. Spread them out and make sure they are not overlapping each other, for even baking.

  4. Bake at 450 degrees for 25-30 minutes or until tender, golden brown and slightly charred, making sure to toss everything halfway during baking. 

  5. Garnish with fresh parsley and serve immediately. Enjoy!
