Quick and easy chickpea salad recipe, made with simple ingredients in one pot or bowl in 30 minutes. Loaded with veggies, olives, feta cheese and lemon vinaigrette.

  • 1 cup Cucumbers Diced
  • 2 cans Chickpeas 15 oz. cans, Drained, Rinsed
  • 1 cup Tomatoes Diced
  • 1/2 cup Red onions Thinly sliced
  • 1/2 cup Bell peppers Red, green and orange
  • 2 tbsp Parsley Roughly chopped
  • 1/3 cup Black olives
  • 1/2 cup Olive oil
  • 1/4 cup Lemon juice
  • 1 tsp Ginger powder
  • 1 tsp Garlic powder
  • 1/4 tsp Red chili flakes Optional
  • Salt To taste
  • Pepper To taste
  • 1/2 cup Feta cheese Crumbled


  1. In a large mixing bowl or salad bowl, add cucumbers, chickpeas, tomatoes, onions, peppers, parsley, olives, oil, lemon juice, ginger, garlic, red chili flakes, salt, pepper. 

  2. Mix everything together until combined.

  3. Toss feta cheese on top.

  4. Cover and chill for 20-30 minutes. Enjoy!
