Easy One Pan Cucumber Sandwiches

Ingredients

  • 8 oz. Garlic herb cream cheese Full fat, Softened
  • 1 English cucumber Thinly sliced, Patted dry with paper towels
  • 1 loaf White bread Sliced, Crusts removed
  • 2 tablespoon Dill Fresh, Finely chopped
  • 2 tablespoon Chives Fresh, Finely chopped

Instructions

  • Spread cream cheese mixture on one side of all the bread slices.
  • Place sliced cucumbers on top of half the bread slices.
  • Sprinkle dill and chives on top of the cucumbers.
  • Then, top off with remaining bread slices.
  • Cut each sandwich into 2 pieces or 3 pieces (if you want smaller finger sandwiches for appetizer). Enjoy!

Notes

  • Use full fat cream cheese for maximum richness and creaminess.
  • Try other fresh herbs that you enjoy. 
  • Be sure to pat the cucumbers dry with paper towels to prevent them from making the bread soggy.
  • There is no need to heat these sandwiches. They are served cold. 
  • Feed a crowd by doubling all the ingredients in this recipe to make a big batch.
  • Cucumbers must be very thinly sliced because this produces the best overall texture in each bite.

  • Leftovers can be stored in a sealed container in the fridge for up to 2 days.
  • If you can't find garlic herb cream cheese at the market or you have run out of it, make it at home. Mix together the following ingredients to make your own unique cream cheese blend. Once prepared, store it in a sealed container in the fridge for up to 1 week. The quantities of all the ingredients can be adjusted, based on your preference.

    • 3 tbsp Mayonnaise-  Full fat
    • 2 tsp Dill-  Fresh, Finely chopped
    • 1 tsp Chives-  Fresh, Finely chopped
    • 1-2 tsp-  Garlic powder
    • Salt-  To taste
    • Pepper-  To taste
