One Pot Bacon Fried Rice

Quick and easy bacon fried rice recipe, homemade with simple ingredients in one pot over stovetop. Loaded with crispy bacon, scrambled eggs, frozen vegetables. This 30 minute meal is better than Chinese takeout.

Ingredients

  • ½ cup Bacon Roughly chopped
  • 1 teaspoon Sesame oil
  • ½ cup Onion Finely chopped
  • 2 cloves Garlic Finely minced
  • 1 cup Frozen vegetables Combination of peas, carrots, corn, green beans
  • 3 Eggs Lightly beaten
  • 3.5 cups Jasmine or white rice Cooked, Day old is best
  • 3 tablespoon Soy sauce
  • 1 tablespoon Sriracha sauce
  • Salt To taste
  • Pepper To taste

Instructions

  • Heat a nonstick pot over medium high heat.
  • Add bacon and cook for a few minutes until crisp. Remove bacon from pot and keep aside. Crumble it when it cools down a bit. Don't throw away the bacon fat. 
  • In the same pot with bacon fat, add sesame oil, onion, garlic, frozen vegetables and saute for a few minutes until they are tender. 
  • Push these vegetables to one side of the pot and add eggs.
  • Scramble them until fully cooked. 
  • Mix them together with the veggies.
  • Add boiled rice, cooked bacon, soy sauce, Sriracha sauce, salt, pepper and mix everything together.
  • Garnish with some more cooked bacon and lots of green onions. Enjoy!

  • Tastes best when served immediately but leftovers can be stored in a sealed container in the fridge for up to 2 days.
