Carrot salad ginger dressing
Salad
- 4-5 Carrots Large, Washed, Patted dry, Grated or Thinly sliced into matchsticks
- 1.5 tablespoon Parsley Finely chopped
- 3 tablespoon Raisins Can add more or less according to your preference
- 3 tablespoon Dried cranberries The Trader Joe's orange flavored cranberries are incredible in this recipe, Can add more or less according to your preference
In a large salad bowl, prepare the dressing by whisking together olive oil, mayonnaise, fresh ginger, mustard, honey, lemon juice, salt, pepper until properly emulsified.
Add carrots, parsley, raisins, cranberries. Toss until combined.
Serve immediately and enjoy!
