One Pan Leftover Mashed Potato Pancakes

  • In a mixing bowl, add mashed potatoes, shredded cheese, onions, egg, flour, salt, pepper and mix until combined.
  • Scoop out small portions of this mixture and form balls and flatten them. Use disposable plastic gloves and that prevents any sticky mess. 
  • Coat them in flour or breadcrumbs.
  • Heat 3-4 tablespoon of oil in a large non-stick pan over medium heat. 
  • Pan fry these pancakes, in batches, until they are golden brown and crispy on the the bottom. Then, flip it over and fry the other sides until they are also golden brown and crispy. 
  • Remove the pancakes from the pan onto a cookie tray, lined with paper towels.
  • Garnish with some finely chopped spring onions if you like and enjoy.

Notes

  • Use freshly shredded cheese rather than using the pre-shredded ones because they are coated in cornstarch which adds an odd after-taste. 
  • Use full fat cheese because it tastes the best and also melts the best. 
  • Please note than you are pan-frying these pancakes and not deep-frying them. A little oil goes a long way. 
  • If the mixture is too soft, add more flour so that it's easier to handle and form into round flat patty shapes.
  • If the mixture is too dry and crumbly, add some milk (1 tablespoon at a time) until it's easier to handle. 
  • Do not over-crowd the pan so that the pancakes cook evenly. 
  • Don't keep flipping the pancakes over and over again because that can cause them to break and fall apart.

  • Leftovers can be stored in a sealed container in the fridge for 2-3 days but tastes best when made fresh.
