Quick and easy one pot vegetable chow mein recipe. This homemade vegetarian stir fry requires simple ingredients and it's better than take out. Full of pan fried crispy noodles, lots of cabbage and variety of veggies that are coated in a sweet and savory umami sauce.

Variations

This is quite filling on its own but you can include any of these on the side to make it a heavier meal:

- What's the difference between chow mein and lo mein? Are they the same?
No, they are not the same. Chow mein noodles are thinner. They also get fried in some oil until somewhat crispy and then get tossed with the sauce and veggies. - ADD MORE

- Make ahead- You can make the sauce a day in advance and store in the fridge but fry the noodles and saute the veggies and assemble everything the day you plan to serve. This will prevent the noodles from becoming soggy.

One Pot Vegetable Chow Mein Noodles

Ingredients
- 8 oz. Dried chow mein noodles
- 3 tablespoon Peanut oil
- 1 tablespoon Vegetable oil Or any neutral tasting oil
- â…“ cup Mushrooms Preferably shiitake mushrooms. They should typically be thinly sliced but I finely chopped mine very small so as to hide them in this meal. Kiddo is not fond of them at all.
- 3 cloves Garlic Finely minced
- 2 teaspoon Ginger Freshly grated
- ¼ cup Onions Thinly sliced
- ¼ cup Celery Washed and thinly sliced
- ¾ cup Carrots Washed, peeled and thinly sliced
- ¾ cup Peppers Ant color you like, Washed and thinly sliced
- 1.5 cups Cabbage Washed and thinly sliced
Chow mein sauce
- 3 tablespoon Soy sauce Low sodium
- 1 tablespoon Hoisin sauce
- 1 tablespoon Shaoxing wine This is Chinese cooking wine. It can be replaced with Mirin or Sake
- 1-2 teaspoon Sriracha sauce Adjust according to your preference
- 1 teaspoon Sesame oil
- 2 teaspoon Brown sugar If you prefer only a hint of sweetness, add 1 teaspoon brown sugar.
- Salt To taste
- Pepper To taste
- 2 teaspoon Cornstarch
Topping
- 2-3 stalks Green onions Washed, Finely chopped
Instructions
- Prepare the noodles according to the package directions in boiling water.
- Drain and rinse with cold water.
- Heat peanut oil in this same nonstick pot and add the noodles. Pan fry them until they are golden and crispy. Remove noodles from pot and transfer to a serving dish and keep aside for now.
- In the same pot, heat vegetable oil over Medium heat.
- Then, add mushrooms, garlic, ginger and cook until golden brown and fragrant.
- Increase the heat to Medium High and add onion, celery, carrots, peppers and saute for a couple of minutes.
- Next, add cabbage and stir fry for another minute until all veggies are partially soft. They should still hold some of their firmness and structure.
- Add the pan fried noodles in this pot.
- In a disposable plastic cup, add soy sauce, hoisin sauce, Shaoxing wine, Sriracha sauce, sesame oil, brown sugar, salt, pepper. Mix until combined. Make sure there are no lumps.
- Pour this sauce in the pot too.
- Toss everything together until combined.
- Remove from heat and transfer to serving dish.
- Garnish with lots of green onions.
- Serve immediately and enjoy.
Notes
- To speed up the process, prepare all your veggies as well as boil your noodles in advance. Â
- Adjust amount of brown sugar, based on how sweet you prefer this dish.
- If you don't have Shaoxing wine, use Mirin or Sake. I have heard some people also use dry white wine successfully but I haven't tried that myself.Â
- If you don't have chow mein noodles, you can use ramen noodles or thin egg noodles or even angel hair pasta.Â
- Adjust amount and variety of veggies, based on your preference.Â
- Use low sodium soy sauce to prevent this meal from becoming too salty.
- Make sure you are using a nonstick pot to prevent sticking and burning.Â

- Leftovers can be stored in a sealed container in the fridge for up to 3 days and reheated in the microwave with a splash of water.
