    Key ingredients

    • Olive oil- Used for extra flavor and saute.
    • Butter- Use unsalted for best results.
    • Chicken- I like to use cubed boneless chicken.
    • Spices and seasonings- Salt, pepper, and Italian seasoning add to the overall flavor.
    • 40 cloves- Use whole, not minced or chopped.
    • White wine- This will boos the overall flavor of the recipe.
    • Chicken broth- Use low sodium so the dish doesn't become too salty.
    • Lemon juice- Adds a bit of tang that compliments overall dish.
    • Garnish- Use fresh parsley to complete the dish.

    Variations

    • Add potatoes- Add 1 cup potatoes (cut into cubes) in this recipe.
    • Use chicken thighs- Replace chicken breast with thighs.
    • Make chicken wings- Replace chicken breast with wings.
    • Use on pasta- Serve this chicken with boiled spaghetti or just toss boiled noodles in the pot with the chicken and sauce. Garnish with some shredded parmesan cheese.
    • Creamy option- You can do this 1 of 2 ways. First, dilute cornstarch or flour with some water and mix that into the sauce. Or just add ⅓ cup cream cheese and mix that into the sauce. This will change the flavor a bit.

    How to make easy one pot 40 cloves garlic chicken recipe from scratch?

    1. Heat oil and butter- In a nonstick pot.
    2. Cook chicken- Until no longer pink.
    3. Add in- Italian seasoning, salt, pepper, broth, wine, lemon juice and mix.
    4. Cover with lid- And cook for a few minutes.
    5. Uncover and cook- Until liquid is reduced.
    6. Garnish- With parsley and enjoy.

    What to serve with chicken in garlic sauce?

    • Rice- Such as Chicken Fried Rice (One Pot) or Vegetable Fried Rice (One Pot).
    • Pasta- Like spaghetti, linguine, Zucchini Noodles (Zoodles) and Spaghetti Squash (Instant Pot).
    • Salad- Including this Easy Green Salad (One Bowl) that seems to go with just about anything.
    • Soup- Easy Vegetable Soup Recipe (One Pot) is a great option to balance out the protein.

    Tips and techniques

    • Use unsalted butter and low sodium broth- To prevent the meal from becoming too salty.
    • Whole chicken breasts or thighs or drumsticks- Can easily be used in this recipe. I like to use cube sized chicken breast pieces because they cook faster.
    • Don't chop the garlic into small pieces- Because whole garlic needs to be used.
    • Adjust the amount of Italian seasoning- Based on your preference.
    • You can substitute white wine- With additional low sodium chicken broth.

    How do I make a garlic chicken marinade?

    In a deep bowl, mix together ¼ cup wine, ¼ cup chicken broth, garlic, salt, pepper, lemon juice, Italian seasoning. Add chicken and marinate for at least 1 hour or overnight for a deeper flavor.

    Can I use this as a gravy?

    Yes. Cook the marinade in a nonstick pot on medium high heat until it's reduced to a gravy consistency. If you like, you can also mix in diluted cornstarch or flour to make it thicker.

    How do you make a roasted or baked version?

    Marinade chicken (see above) and place chicken on a sheet pan. Bake at 375 degrees for about 20 minutes or until chicken is fully cooked. Garnish with fresh parsley and enjoy.

    Storage

    • Make ahead- This can be make up to 2 days before serving if kept in the fridge in a sealed container. Reheat before serving. This can also be served after freezing (see below), but fresh is always best.
    • Refrigerate- Place in a sealed container for up to 2 days.
    • Freeze- Place in a sealed container for up to 1 month. Thaw in the fridge, reheat, and serve.
    • Reheat- Reheat in the microwave or on the stovetop.

    Ingredients
      

    • 1.5 tablespoon Olive oil
    • 1.5 tablespoon Butter Unsalted
    • 2 pounds Boneless chicken Cut into 2 inch cubes
    • 1 tablespoon Italian seasoning
    • Salt To taste
    • Pepper To taste
    • 40 cloves Garlic Fresh, Whole
    • ½ cup White wine Or chicken broth
    • ½ cup Chicken broth Low sodium
    • 1 teaspoon Lemon juice
    • 1 tablespoon Parsley Fresh, Roughly chopped, For garnish

    Instructions
     

    • Heat oil and butter in a nonstick pan over medium high heat.
    • Add chicken, Italian seasoning, salt, pepper and cook on both sides until no longer pink. 
    • Add garlic and saute for about 1 minute until fragrant. 
    • Add wine, broth, lemon juice and mix.
    • Cover and cook for about 8 minutes. 
    • Remove lid and cook uncovered until liquid is reduced and sauce becomes thick to your desired consistency. 
    • Garnish with parsley and enjoy.
