- Refrigerate- This is one of those salads where leftovers cannot be stored overnight because cucumbers release a lot of water, making the salad watery.
- Freeze- Leftovers should not be stored in the freezer, because upon thawing the cucumbers lose their crunch and it's not as appetizing.

Ingredients
- 1 teaspoon Ginger Finely minced
- 2 tablespoon Rice vinegar
- 1 tablespoon Sesame oil
- 1 tbsp Olive oil
- 1 tablespoon Honey Or sugar
- 1 tablespoon Soy sauce
- Salt To taste
- 2 Cucumbers Big, Peeled and cut into slices
- ½ teaspoon Red chili flakes
- 1 teaspoon Sesame seeds Toasted
Instructions
- In a large salad bowl, add ginger, vinegar, sesame oil, olive oil, honey, soy sauce, salt and whisk everything together.
- Add cucumbers and mix everything together.
- Sprinkle red chili flakes and sesame seeds.
- Serve immediately or let it sit in the fridge for 30 minutes for the flavors to truly marinate. Enjoy!
