    The best quick and easy cucumber tomato salad recipe, homemade with simple ingredients in one pot 20 minutes. Marinated with an Italian herb vinaigrette dressing.

    This light and refreshing salad is an excellent way to use up fresh Summer veggies. It's always in our meal plan, along with this Creamy Cucumber Salad (One Bowl) and this Tomato Avocado Salad (One Bowl) as well as this Cherry Tomato Salad (One Bowl).

    How to make cucumber tomato salad recipe (cucumber and tomato salad)?

    1. Mix together oil, vinegar, fresh herbs, ginger, garlic, salt, pepper.
    2. Toss tomatoes, onions, cucumbers.
    3. Chill.
    4. Enjoy!

    What to serve with cucumber tomato onion salad?

    This fresh Summer salad makes a delicious side dish with smoked, baked, roasted or grilled chicken, steak and even seafood (fish such as salmon, shrimps e.t.c). It’s also considered to be a classic side dish for picnics, potlucks and Summer BBQ parties with hot dogs and burgers.

    Try it with some of these family favorite main dishes: Honey Garlic Chicken (One Pan)or this Chili Lime Chicken (One Pan), and even these Garlic Butter Steak Bites (One Pan).

    I have seen so many variations of this tomato cucumber salad. Some have only dill. Others use multiple herbs. Some people sweat cucumbers first. Some people replace a vinaigrette with a creamy dressing. The recipe I am sharing today has a lot of flavor with very little effort.

    Variations

    Add onions- Red onions are best but regular onions are fine too.

    Make it spicy- Add some red chili flakes.

    Add peppers- Use a combination of red, yellow, orange and green peppers.

    Add beans or chickpeas- Mix in 1 cup of beans or chickpeas to make this a more filling salad.

    Add cheese- Such as mozzarella, parmesan, cheddar, monterey jack, provolone. You can also use a combination of multiple cheeses. Make Greek Cucumber Tomato Feta Salad by sprinkling ½ cup Feta cheese on top.

    Add avocado- To make a creamy salad.

    Tips and Techniques

    Lemon juice vs. Vinegar- Use whatever you have in hand or whatever you like. I, personally, like lemon juice,

    What herbs to use in salad? Use a combination of your favorite herbs. I used cilantro, parsley and dill but you can also use basil, thyme, chives, oregano. Make sure you are using fresh herbs because they look better, taste better and have a lovely strong aroma.

    Use ripe tomatoes- Because they are juicy and have maximum flavor.

    Do you remove seeds in cucumbers? That's an unnecessary step unless your cucumbers are very bitter.

    What type of cucumbers to use in salad? Any type of cucumber should work well. I have used the following successfully: English cucumber, little Persian cucumbers and big waxed cucumbers.

    How do you cut tomatoes for a salad? If you are using cherry tomatoes, just slice them in half, along the length of the tomatoes. For regular Roma tomatoes, slice them in half, along the length of the tomatoes. Then, remove and discard the seeds with a spoon if you like. Then, just dice them.

    Adjust amount of herbs and spices- This is based on your preference. Add more or less of whatever you like or dislike.

    Use high quality olive oil– Because it truly makes a difference in the overall flavor.

    Let it rest- You can’t serve this salad immediately. Let it rest and marinate in the fridge for at least 30 minutes or overnight to really allow the flavors to deepen. It’s totally worth it!

    Ingredients
      

    • 4 tablespoon Olive oil
    • 2-3 tablespoon Vinegar Or fresh lemon juice
    • 1 tablespoon Cilantro Fresh, Finely chopped
    • 1 tablespoon Parsley Fresh, Finely chopped
    • 1 teaspoon Dill Fresh, Finely chopped
    • 1 teaspoon Ginger powder
    • 1 teaspoon Garlic powder
    • Salt To taste
    • Pepper To taste
    • 3 cups Cucumbers Diced
    • 2 cups Cherry tomatoes Cut in half
    • ¼ cup Onions Roughly chopped

    Instructions
     

    • In a large mixing bowl or salad bowl, add oil, vinegar, cilantro, parsley. dill, ginger, garlic, salt, pepper and whisk everything together.
    • Add cucumbers, tomatoes, onions and toss to coat everything.
    • Cover and chill for 30 minutes to allow the flavors to marinate. Enjoy!
