Quick, easy instant pot jambalaya recipe, homemade with simple ingredients in 30 minutes. Loaded with Andouille sausage, chicken, shrimp, Cajun seasoning.

This is the most flavorful and comforting meal ever! I love that the pressure cooker makes the depth of flavor that usually takes hours or even a whole day to develop possible in less than 30 minutes. It is still mind blowing! How To Make Easy Instant Pot Jambalaya Recipe From Scratch?

  1. Brown sausage- And keep aside
  2. Saute chicken– Until no longer pink.
  3. Add remaining ingredients– This includes onion, garlic, green pepper, and celery, Cajun seasoning, salt, pepper, paprika, thyme, basil, tabasco sauce, rice, diced tomatoes and chicken broth.
  4. Mix– Until combined.
  5. Cover– And cook.
  6. Release pressure– Naturally for 5 minutes, then followed by quick pressure release.
  7. Stir in two final ingredients- This is shrimp and cooked sausages.
  8. Cover– Allow the heat to cook the shrimp. Enjoy!

Homemade Jambalaya Seasoning/Spices/Sauce

Combine the following spices for a dry blend and mix in some olive oil and tabasco sauce to create a sauce:

  • 2-3 tsp Cajun seasoning Adjust according to your preference
  • Salt To taste
  • Pepper To taste
  • 1/2 tsp Paprika
  • 1/4 tsp Dried thyme
  • 1 tsp Dried basil

Variations For Cajun Jambalaya Rice

Vegan/Vegetarian jambalaya– Either leave meat out, or replace it with plant-based substitutions. Also, use vegetable broth in place of chicken broth.

Turn it into a pasta dish– Leave out the rice, and serve the meat and vegetables over your favorite pasta.

Seafood version– Add crab, mussels, lobster, crawfish, or fish to create a seafood version.

Creole soup– Simply add more broth and Cajun seasoning so it doesn’t taste watered down.

Add other vegetables– Such as okra, red and yellow bell peppers, or green beans.

Make it spicier– Add more Tabasco sauce or add cayenne pepper.

Use cauliflower rice– In place of white rice for a low-carb version.

Use other cuts of chicken– Such as thigh meat, or use meat from an Instant Pot Whole Chicken (Rotisserie Chicken).

Add other meat– Chorizo makes a great addition to this dish.

Add a bay leaf– For even more depth of flavor.

Tips And Techniques

What is the best rice for this recipe? I recommend using uncooked long grain white rice, but you can use whatever you prefer. Brown or wild rice would make a great variation but the cook time may be a few minutes longer.

Should jambalaya be wet or dry? Authentically, it is more of a dry dish, but the Western versions are more wet and “soupy” comparatively.

How to thicken jambalaya? Cook on Saute mode uncovered until it is thickened to your liking.

How to make it thinner? Simply add more broth.

How to release pressure from the pressure cooker? Let the pressure come down naturally for 5 minutes, and then carefully do a quick pressure release.

Can I put raw chicken in the instant pot? Yes, that is one of the beauties of the pressure cooker. You can put in raw meat and it comes out with tender, juicy meat in a very short amount of time.

Adjust amount of herbs and spices– Add more of less of whatever you like or dislike.

Use low sodium broth– Because it prevents this meal from becoming too salty.

Storage

Refrigerate– In a sealed container for up to 3 days.

Freeze– In a freezer-safe container for up to 1 month.

Reheat– From thawed in the microwave or on the stovetop, but you will need to add more broth because the rice with absorb a lot of it.

Ingredients

Instructions 

  • Turn on the Instant pot and set the "Saute" mode.
  • Heat 1 tbsp oil and add sausage.
  • Cook until browned on all sides.
  • Remove from pressure cooker and transfer to a plate lined with paper towels
  • Add remaining 1 tbsp oil in pot.
  • Add chicken and cook until no longer pink.
  • Add onion, garlic, green pepper, celery and saute for 2 minutes.
  • Add Cajun seasoning, salt, pepper, paprika, thyme, basil, tabasco sauce, rice.
  • Mix until combined.
  • Add diced tomatoes and chicken broth.
  • Mix until combined.
  • Put the lid on and turn the valve to “Sealing.”
  • Select “Manual” mode and set the timer for 5 minutes.
  • When the cook time is over, allow pressure to release naturally for 5 minutes. Then, do a quick pressure release.
  • Carefully open the lid and stir in shrimp and cooked sausages.
  • Turn off instant pot.
  • Cover and allow the residual heat cook the shrimp for about 5 to 10 minutes. Enjoy!
