Quick and easy Thai peanut noodles recipe, made with simple ingredients in one pot on stovetop. This 30 minute meal is loaded with garlic, peanut butter and a little spice.
Now that school is open again, we all need easy dinner ideas like this. If your family is a fan of peanuts/ peanut butter and Asian food, they are going to love this along with my Instant Pot Peanut Butter Chicken (One Pot). The use of Sriracha sauce, soy sauce, fish sauce and green onions gives this meal an Asian flavor. Unlike Chinese meals, Thai meals have a little spicy kick to them.

- Spaghetti- You'll want to use an entire 16 oz box.
- Olive oil- You could also use vegetable oil.
- Sesame oil- Don't skip this, because it adds key flavor.
- Garlic- Us fresh, finely minced.
- Ginger- Also fresh and finely minced.
- Onions- These are optional but add a lot of flavor.
- Soy sauce- Be sure you use low sodium so your dish isn't too salty.
- Sriracha sauce- To add a bit of spice.
- Fish sauce- Although this is optional it really brings in the Thai flavor profile.
- Seasoned rice vinegar- This is not your everyday white vinegar.
- Brown sugar- Compliments the tangy, spicy flavors with sweetness.
- Peanut butter- Used in the dish and for drizzling on top.
- Salt- Adjust according to your preference.
- Green onion- Used as a garnish.
- Peanuts- You can us salted or unsalted.
- Lime- This is used as a nice topping.
Variations
- Make it spicier- Increase the amount of Sriracha sauce and add some chili flakes.
- Cold option- Chill these noodles for 2-3 hours and enjoy them cold.
- Add chicken- Use 1 cup cooked chicken breast cubes or even shredded chicken in this pasta.
- Tofu version- Mix in 1 cup stir fried tofu cubes in this pasta at the very end.
- Add in other vegetables- Including various steamed vegetables or Oven Roasted Vegetables (One Pan).
How to make peanut sesame noodles?
- Cook spaghetti- In a pot, drain, and set aside.
- Saute- Garlic, ginger, and onions in oils.
- Add in and whisk together- Soy sauce, Sriracha sauce, fish sauce, vinegar, brown sugar, peanut butter, and salt.
- Add boiled spaghetti- To the pot and mix with sauce until combined.
- Drizzle- Nelted peanut butter on top.
- Garnish with- Green onions and roasted peanuts.
- Squeeze- A bit of lime juice on top and enjoy.
What to serve with sesame peanut noodles?
- Vegetables- Such as Honey Glazed Carrots (One Pot), steamed veggies, or even Oven Roasted Vegetables (One Pan).

Tips and techniques
- Don't cook the spaghetti and sauce altogether- Because that added too much starch in this meal.
- Use fresh ginger and fresh garlic- Instead of ground ginger/garlic because fresh always has the best flavor and fragrance.
- Adjust the amount of Sriracha sauce- Based on your preference.
- Don't omit sesame oil- Even though it's a small amount, it adds a lot of flavor.
- Use low sodium soy sauce- To prevent the meal from becoming too salty.
- Soy sauce can be replaced- With coconut aminos, if you have soy allergies.
- Use the best quality peanut butter- That is pure and has not been sweetened. There are many brands out there. Use your favorite without any artificial colorings and flavors for the best flavor. I highly recommend using the unsweetened version without any sugar, honey or maple syrup since that makes the overall meal too sweet.

Ingredients
- 1 pound Spaghetti
- 1 tablespoon Olive oil Or vegetable oil
- 1 tablespoon Sesame oil
- 2.5 tablespoon Garlic Finely minced

- 1.5-2 tablespoon Sriracha sauce

- 2 tablespoon Brown sugar
- ⅓ cup Peanut butter
- Salt To taste
- 2 tablespoon Additional peanut butter For drizzling
- 1 stalk Green onion Finely sliced, For topping
- 3 tablespoon Peanuts Roasted, Salted or unsalted
- 1 small Lime For topping
Instructions
- Cook spaghetti in a nonstick pot, based on your box directions. Drain and keep aside.
- In the same pot, heat olive oil and sesame oil over low heat.
- Add garlic, ginger, onions and saute for 1-2 minutes or until fragrant.
- Add soy sauce, Sriracha sauce, fish sauce, vinegar, brown sugar, peanut butter, salt and whisk everything together until smooth. Turn off heat.
- Add boiled spaghetti in this pot mix it together with the sauce until fully combined.
- Drizzle some melted peanut butter on top.
- Sprinkle green onions and roasted peanuts.
- Squeeze a bit of lime juice on top and enjoy.
