This salad is full of some of my favorite things. In fact, that is one thing I like most about salads is that you can combine several things together to make a delicious symphony in your mouth and this salad, along with my Apple Salad (One Pot), is no exception.
Of course, there are many different kinds of salads. You may like pasta salads like this Basil Pesto Pasta Salad (One Bowl) or a classic egg salad used for an Easy Egg Salad Sandwich (One Pan). There are so many possibilities to use for your next meal.

- Olive oil- A dressing/vinaigrette staple that adds flavor.
- Apple cider vinegar- Brings in a tart component to balance the sweet.
- Balsamic vinegar- Adds a unique taste that compliments the greens.
- Blueberry jam- You can also use preserves, if preferred.
- Maple syrup- This adds a gently sweetness to the dressings.
- Dijon mustard- Adds a unique complexity to the salad.
- Salt and pepper- For added flavor, adjusted according to preference.
- Greens- You will need both arugula and spinach.
- Blueberries- Be sure they are fresh and high quality.
- Almonds- I like to use the slivered style best.
Variations
- Switch out blueberries- For other fresh fruit/berries like strawberries, peaches, mandarin oranges, or cranberries. And for the vinaigrette/dressing, use strawberry jam, cranberry preserves, or other corresponding flavor choices.
- Use a variety of berries- To make a berry spinach salad that popping with flavor. My favorite combo is using strawberries, raspberries, and blueberries together.
- Try other nut toppings- Such as chopped pecans, walnuts and even pistachios. You can also add in candied nuts for a sweet addition.
- Toss cheese on top- Like shredded cheddar, crumbled goat cheese, blue cheese, Parmesan, or feta cheese.
- Try other greens and veggies- Such as beets, cucumbers, corn, lettuce, kale, Swiss chards, or radicchio.
- Add a protein- Such as shredded Instant Pot Whole Chicken (Rotisserie Chicken), cubed Slow Cooker Ham, salmon, or leftover Thanksgiving Turkey (One Pan).
- Use honey- In place of maple syrup and adjust according to personal preference.
- Toss in some chopped avocado- For added nutrition and creaminess.
- Sprinkle on other seasonings- Such as paprika, parsley, or Season All.
How to make easy blueberry salad recipe from scratch?
- Whisk together- Olive oil, apple cider vinegar, balsamic vinegar, blueberry jam, maple syrup, mustard, salt, and pepper.
- Toss in- Leafy greens and blueberries.
- Top with- Slivered almonds then serve.

- The greens and blueberries must be washed and patted dry- With lots of paper towels to ensure you don't end up with a watery salad.
- I recommend using slivered almonds- As opposed to chopped almonds, because the overall texture is best.
- Adjust the amount of maple syrup- Based on your sweetness preference.
- Tastes best when served immediately- Otherwise the leafy greens will go limp.
- Use baby spinach- For smaller, easier bites and better flavor.

Storage
- Make ahead- This salad is best served fresh, especially if the dressing has already been added. However, if kept separate, you can make ahead and keep in a fridge a few days.
- Refrigerate- Store all components (dressing, toppings, and greens) separately in a sealed container for up to 2 days. Mix together and serve.
- Freeze- This is not recommended, because the salad will wilt upon thawing.

Ingredients
Blueberry Vinaigrette or Dressing
- ½ cup Olive oil
- 2 tablespoon Apple cider vinegar
- 2 tablespoon Balsamic vinegar
- 2 tablespoon Blueberry jam Can also use blueberry preserves
- 1 teaspoon Maple syrup Or honey
- 1 teaspoon Dijon mustard
- Salt To taste
- Pepper To taste
Greens and Fruits
- 6 cups Leafy greens Combination of arugula and spinach, Washed and patted dry
- ¾ cup Blueberries Fresh, Washed and patted dry
Toppings
- ¼ cup Slivered almonds
Instructions
- In a large salad bowl, whisk together olive oil, apple cider vinegar, balsamic vinegar, blueberry jam, maple syrup, mustard, salt, pepper and mix until combined.
- Add leafy greens, blueberries and toss until combined.
- Top it all off with slivered almonds and serve immediately.
Notes
- Try other greens like lettuce, kale, Swiss chards, radicchio.
- The greens and blueberries must be washed and patted dry with lots of paper towels to ensure you don't end up with a watery salad.
- Some other toppings you can try include crumbled goat cheese or feta cheese, other nuts such as chopped pecans, walnuts and even pistachios.
- I have made this salad with slivered almonds and roughly chopped almonds. The overall texture of this salad just works best with slivered almonds and that's what I highly recommend.
- Adjust the amount of maple syrup based on your sweetness preference.

- Leftovers cannot be stored for later because the salad will become soggy. However, you can store the greens, vinaigrette and toppings separately for 2 days in the fridge and mix just before serving.
