I love the Easter season and all of the fun foods you can make for the festivities. This is a simple and satisfying salad that brings in the taste of Spring with fresh berries and lemon. How to make easy Easter salad recipe from scratch?
- Whisk together- All the liquids and spices.
- Toss in- Berries and almonds.

Jam vinaigrette
This is an easy dressing to make and drizzle over many different salads salads! All you need to do is combine the right ingredients-
- ⅓ cup Olive oil
- ¼ cup Lemon juice
- 3 tbsp Jam
- 1-2 tbsp Honey
- Salt, To taste
- Pepper, To taste
- 1-2 tsp Poppy seeds
Mix it altogether, drizzle over the salad, and toss!

Wash and dry berries and greens- Because you want your fruit to be clean, but you don't want the extra water in your salad.
Adjust spices- You may find that a little or a lot of salt, pepper, or poppy seeds fits your taste better.
Whisk liquids thoroughly- Because you want all the ingredients well combined, especially with honey that can often remain in sticky globs.
Use toasted almonds- Because they add a nice color, crunch, and flavor. However, if you are in a hurry and just have regular sliced almonds that will also do.
Storage
Fridge- This salad tastes best when served immediately. Leftovers cannot be stored for later, because the salad will become soggy. However, you can store the salad, dressing and toppings separately for 2 days in the fridge, then mix altogether right before serving.
Freeze- Do not freeze salad, because the greens will wilt when thawed. You can, however, freeze the dressing for up to 1 month.

Ingredients
Jam Vinaigrette
- ⅓ cup Olive oil
- ¼ cup Lemon juice Preferably freshly squeezed, Can be replaced with any other citrus juice
- 3 tablespoon Jam Can use orange marmalade or raspberry jam or even strawberry jam
- 1-2 tablespoon Honey Or maple syrup, Adjust according to your preference
- Salt To taste
- Pepper To taste
- 1-2 teaspoon Poppy seeds Adjust according to your preference
Salad
- 6 cups Leafy greens Combination of spinach, lettuce, arugula
- 1 cup Raspberries Fresh, Washed, Patted dry
- 1 cup Strawberries Fresh, Washed, Hulled, Patted dry, Sliced
- ⅓ cup Sliced almonds Preferably toasted
Instructions
- In a large salad bowl, whisk together olive oil, lemon juice, jam, honey, salt, pepper, poppy seeds until combined.
- Add greens, raspberries, strawberries, almonds and toss until combined.
- Serve immediately and enjoy.
