Easy Easter Salad (One Bowl)

Quick and easy Easter salad recipe to go with ham, homemade with simple ingredients in one pot in 10 minutes. Full of leafy greens, strawberries, raspberries, almonds and a simple jam vinaigrette.

I love the Easter season and all of the fun foods you can make for the festivities. This is a simple and satisfying salad that brings in the taste of Spring with fresh berries and lemon. I also have other salads you can try when more holidays come rolling around, such as Harvest Fall Salad, Thanksgiving Salad, and Christmas Salad.

How to make easy Easter salad recipe from scratch?

  1. Whisk together– All the liquids and spices.
  2. Toss in- Berries and almonds.
  3. Serve– Immediately and enjoy.

Jam vinaigrette 

This is an easy dressing to make and drizzle over many different salads salads! All you need to do is combine the right ingredients-

  • 1/3 cup Olive oil
  • 1/4 cup Lemon juice
  • 3 tbsp Jam
  • 1-2 tbsp Honey
  • Salt, To taste
  • Pepper, To taste
  • 1-2 tsp Poppy seeds

Mix it altogether, drizzle over the salad, and toss!

Variations for easter salad to go with ham

Substitute lemon juice– With another citrus juice, such as orange or lime.

Substitute honey– With pure sample syrup or agave syrup.

Use different jams- Try this recipe with different kinds of jams including marmalade, raspberry, or strawberry to change up the flavor.

Substitute greens- For Teboulah, Quinoa, or pasta, such as bow tie or rotini.

Add cheese- Such as mozzarella, Parmesan, blue cheese, or Feta.

Topping ideas- You can add in additional toppings, such as croutons, pomegranate arils, or sunflower seeds.

Tips and techniques for brunch salad

Fresh squeezed is best- Because it has the best, fresh flavor, but you can use juice from concentrate as well.

Wash and dry berries and greens- Because you want your fruit to be clean, but you don’t want the extra water in your salad.

Adjust spices- You may find that a little or a lot of salt, pepper, or poppy seeds fits your taste better.

Whisk liquids thoroughly- Because you want all the ingredients well combined, especially with honey that can often remain in sticky globs.

Use toasted almonds- Because they add a nice color, crunch, and flavor. However, if you are in a hurry and just have regular sliced almonds that will also do.

Storage

Fridge- This salad tastes best when served immediately. Leftovers cannot be stored for later, because the salad will become soggy. However, you can store the salad, dressing and toppings separately for 2 days in the fridge, then mix altogether right before serving.

Freeze- Do not freeze salad, because the greens will wilt when thawed. You can, however, freeze the dressing for up to 1 month.

Ingredients

Jam Vinaigrette

  • 1/3 cup Olive oil
  • 1/4 cup Lemon juice, Preferably freshly squeezed, Can be replaced with any other citrus juice
  • 3 tbsp Jam, Can use orange marmalade or raspberry jam or even strawberry jam
  • 1-2 tbsp Honey , Or maple syrup, Adjust according to your preference
  • Salt, To taste
  • Pepper, To taste
  • 1-2 tsp Poppy seeds, Adjust according to your preference

Salad

  • 6 cups Leafy greens, Combination of spinach, lettuce, arugula
  • 1 cup Raspberries, Fresh, Washed, Patted dry
  • 1 cup Strawberries, Fresh, Washed, Hulled, Patted dry, Sliced
  • 1/3 cup Sliced almonds, Preferably toasted

Instructions 

  • In a large salad bowl, whisk together olive oil, lemon juice, jam, honey, salt, pepper, poppy seeds until combined.
  • Add greens, raspberries, strawberries, almonds and toss until combined.
  • Serve immediately and enjoy.

Notes
